Each week we scan Pinterest for the healthiest meals for families on the go that don’t take a lot of time to make, but contain great vitamins and antioxidants for your body. Here are some knock­out recipes that passed by our Pinterest feed this week:

Black Bean and Sweet Potato Flautas

This recipe includes a lot of steps, some which can probably be shortened or skipped, but check out the health benefits! Sweet potatoes are heavy on vitamin A (not to mention vitamin C, vitamin B1, B2 AND B6, potassium and a whole lot of other good nutrients), and fiber-­rich black beans, which contain no cholesterol. Great creative and serve with other vegetables to change up the recipe week after week.

Grilled Buffalo Chicken Lettuce Wraps

Christian recipe developer and food photographer Kristin of Joyful Healthy Eats puts a spin on traditional buffalo chicken with these grilled chicken wraps. If you don’t have grill ­weather 12 months a year, these wraps can be easily adapted into indoor skillet or grill range cooking. The slice of avocado in the lettuce wrap provides a healthy dose of omega­3 fatty acids, fiber and vitamins, and with a drizzle of ranch dressing, these cups are only 53 calories each.

Slow Cooker Garlic Herb Mashed Cauliflower

If you are eating healthy and watching your carbs, but have a deep, mad love for potatoes, cauliflower should become your new best friend. One serving of cauliflower provides 77% of daily vitamin C, and contains cancer­-fighting properties. This recipe takes the cooking time down to just minutes of preparation to get everything ready for the slow cooker. After six hours of slow cooking, your cauliflower is ready to be blended into chunky or creamy vegetable bliss.
